A nice little tool to rename some of your iPhone apps, called "Rename". Most programs can be renamed but some cannot for some reason like Maps and iPod. I wanted to rename Maps to GPS, but it would not change. As you can see I have renamed Mail to E-mail, Safari to Web, VideoRecorder3g to VidRecorder.
Install Rename by going into Installer and search for Rename. It's a free app.
